Citric acid is very suitable for acidifying mash and must, and for improving the flavor of juice. Some fruits (e.g. sweet cherry, mirabelle, Golden Delicious apple, Bartlett pear, fig) contain too little sugar in their natural state. Therefore the addition of sugar is sometimes necessary. Sugar requirement, depending on the type of fruit and flavor, is about 3 grams citric acid per kilo or liter of fruit. A 10 gram pack of citric acid is therefore sufficient for 4 liters of must or mash.
