This highly versatile copper roasting pan will delight you. A Cataplana can be separated into two parts, and both halves can be used as a pan or wok for searing, simmering, or slow cooking. You can prepare side dishes in one half and the main course in the other half, and if you wish, use the halves directly for serving or as plates after cooking.

By joining both halves together and using one as a lid, the Cataplana is excellent for steaming or baking. In Portugal, it is commonly used for cooking seafood. Steaming in the closed space preserves the flavors, providing intense and unexpected taste experiences. Using a Cataplana saves a lot of aluminum foil or roasting bags. The Cataplana can withstand high temperatures, making it suitable as a baking dish for bread in the oven or even directly in the coals. Originally used in equestrian activities, it became one of the first camping cooking utensils for on-the-go. <h1>Healthy Cooking in the Copper Cataplana</h1> <p>Our tip for a healthy life, durable copper pots, and fun in the kitchen: use only good oils and add some at the beginning to your Cataplana. A copper pot should not be heated empty.</p> <p><strong>Important to know:</strong> From 232 degrees, the tin coating could melt. From 250 degrees, the copper could deform.</p> <p>A regular stovetop can reach 400u00b0C, a glass-ceramic cooktop 600u00b0C, and a gas flame or fire can go over 1,000u00b0C!</p> <p><strong>No worries!</strong> During normal cooking, frying, and baking, you will never reach those temperatures.</p> <p><strong>Pay attention to the smoke point.</strong> It's simple: if the oil smokes, it's too hot! You harm your health long before your Cataplana roasting pan suffers.</p> <p>From 175u00b0C, frying becomes unhealthy! Acrylamide is formed. Even high-temperature resistant oils will burn by 200u00b0C at the latest. There is only one exception: artificially highly refined sunflower oils can withstand extreme temperatures above 230u00b0C.</p> <p><strong>Add your food to the pan before the oil burns!</strong> Your health will thank you, and so will your Cataplana!</p> <p><strong>One more tip:</strong> You don't need a thermometer for frying. Use a wooden cooking spoon and dip the end into the hot oil. If fine air bubbles come out of the spoon handle, the oil is hot enough for frying. If it starts to smoke, it is too hot.</p> <p><strong>What if it happens anyway!</strong> If you accidentally heat your copper pot above 232u00b0C, the tin may melt. It is 100% safe for your health, even if it ends up in the food. Your body will simply excrete it. If necessary, the pot can be retinned.</p> <p>If you expose your copper pot to temperatures above 250u00b0C, it may deform. Actually, not a problem, but when cooking on an electric cooktop, there may be transmission losses due to the deformed bottom.</p> <p><strong>One more important thing:</strong> Copper conducts all temperatures very quickly, including to the handle! Please use a pot holder or cloth when touching the pot.</p> <p>This Cataplana is a very high-quality cooking utensil. With a little love, this wonderful Cataplana will quickly bring you a lot of joy and accompany you for a lifetime.</p> <p>Copper is a living metal and will change color with use. You can polish away these traces of life if you want, but we recommend letting the pot age with dignity.</p> <p>Tin can become dull with use. The original silver shine changes to a matte gray. If you wish, you can always have it retinned. This will cost around 40 euros for a pot of this size but is not necessary as long as the coating is not heavily worn and scratched.</p> <p>&nbsp;</p>
