This highly versatile copper braiser is sure to impress. A Cataplana can be separated into two halves, allowing you to use each half like a frying pan or wok for high-heat searing, gentle cooking, or slow simmering. You can prepare side dishes in one half and the main course in the other, and if you wish, use the two halves directly for serving or even as plates after cooking.

When clipped together with one half serving as a lid, the Cataplana is ideal for steaming and baking. In Portugal, it is most commonly used to prepare seafood. Because food is steamed in a closed environment, the flavors and aromas are fully preserved, creating exceptionally rich and intense taste experiences. Using a Cataplana also eliminates the need for large amounts of aluminum foil or roasting bags. But the Cataplana can do much more...

The Cataplana can withstand high temperatures and is therefore also suitable as a baking pot for bread, both in the oven and directly in hot embers. Originally developed for horse riders, the Cataplana is considered one of the earliest forms of portable camping cookware. You can transport collected ingredients directly inside the Cataplana, thanks to another unique feature: it can be clipped shut and attached like a bag to a saddle or backpack for easy carrying. Copper is relatively lightweight while remaining highly resistant to knocks and impacts. <h2>Healthy cooking with the copper Cataplana</h2> <p>Our tip for a healthy lifestyle, copper cookware that lasts a lifetime, and more enjoyment in the kitchen: use only high-quality oils and add a small amount to your Cataplana right from the start. A copper pot should never be heated empty.</p> <p><strong>Important to know:</strong> The tin lining may begin to melt at temperatures above 232u00b0C (450u00b0F). At temperatures above 250u00b0C (482u00b0F), the copper itself may start to warp.</p> <p>A standard stovetop can reach temperatures of 400u00b0C (752u00b0F), a ceramic cooktop up to 600u00b0C (1,112u00b0F), and a gas flame or open fire can exceed 1,000u00b0C (1,832u00b0F)!</p> <p><strong>Don't worry!</strong> During normal cooking, frying, and baking, you will never reach these temperatures.</p> <p><strong>Pay attention to the smoke point.</strong> It's simple: if the oil starts smoking, it is too hot. Long before your Cataplana suffers any damage, your health may already be affected.</p> <p>Above approximately 175u00b0C (347u00b0F), frying and deep-frying become unhealthy because harmful compounds can form. Even oils designed for high-temperature cooking will generally begin to burn by 200u00b0C (392u00b0F). There is only one exception: highly refined sunflower oils can withstand temperatures above 230u00b0C (446u00b0F).</p> <p><strong>Add your food before the oil starts to burn!</strong> Your health will thank you, and so will your Cataplana.</p> <p><strong>Another useful tip:</strong> You do not need a thermometer for frying. Simply place the end of a wooden spoon into the hot oil. If fine bubbles form around the wood, the oil is hot enough for frying and deep-frying. If the oil starts to smoke, it is far too hot.</p> <p><strong>What if it happens anyway?</strong> If you accidentally heat your copper cookware above 232u00b0C (450u00b0F), the tin lining may melt. Tin is completely harmless to your health, even if traces were to end up in your food. Your body will naturally eliminate it. If necessary, the vessel can be professionally retinned.</p> <p>If you expose your copper cookware to temperatures above 250u00b0C (482u00b0F), it may warp. This is usually not a major issue, but on electric cooktops a warped base can reduce heat transfer efficiency.</p> <p><strong>One more important note:</strong> Copper transfers heat extremely quicklyu2014including to the handles. Always use oven mitts, pot holders, or a cloth when handling hot cookware.</p> <p>This Cataplana is a premium-quality cooking vessel. With a little care, it will quickly become a favorite and may accompany you for a lifetime.</p> <p>Copper is a living metal and will naturally change color over time. While these signs of age can be polished away, we recommend allowing the cookware to develop its own beautiful patina.</p> <p>The tin lining may become dull with use. The original silver shine will gradually change to a matte gray finish. If desired, the Cataplana can be retinned at any time.
