CopperGarden® ø24 cm Cataplana Roasting Pan

This highly versatile copper roasting pan will impress you. A Cataplana can be used without a lid for searing as well as for gentle simmering, just like a frying pan or wok. The Cataplana can be disassembled into two parts, both of which can be used independently. For example, you can prepare side dishes in one half and the main course in the other half.

Even better: After cooking, the two halves can also be used directly for serving or as plates. With the two halves combined, i.e., with the lid, the Cataplana is perfect for steaming or baking. Seafood is traditionally prepared in the Cataplana in Portugal. The closed space during steaming preserves the flavors, providing unexpectedly intense taste experiences when serving and opening it directly at the table.

The Cataplana can do it all and also serves as a baking pot for baking bread directly in the embers. Originally, the Cataplana comes from the equestrian world. Historically, it is certainly one of the first camping cooking utensils. You can transport ingredients collected on the go directly in the Cataplana. Another special feature of the Cataplana comes in handy here: it can be attached like a bag to a saddle or backpack, securely closed, and conveniently taken anywhere. <h1>Healthy Cooking in the Cataplana</h1> <p>Our tip for a healthy life, durable copper pots, and fun in the kitchen: use only good oils and add some of it to your cataplana right at the beginning. A copper pot should not be heated empty.</p> <p><strong>Important to know:</strong> The tin coating may melt at temperatures of 232 degrees Celsius. Copper can warp at temperatures of 250 degrees Celsius.</p> <p>A normal stove burner can reach temperatures of 400 degrees Celsius, a ceramic cooktop can reach 600 degrees Celsius, and a gas flame or fire can exceed 1,000 degrees Celsius!</p> <p>No worries! When cooking, frying, and baking normally, you will never reach these temperatures.</p> <p><strong>Pay attention to the smoke point.</strong> It's simple: if the oil starts to smoke, it's too hot! You will harm your health long before your cataplana casserole suffers.</p> <p>Cooking and frying become unhealthy at temperatures of 175 degrees Celsius! Acrylamide forms. Even oils that can withstand high heat will burn at temperatures up to 200 degrees Celsius. There is only one exception: artificially highly refined sunflower oils can withstand extreme temperatures of over 230 degrees Celsius.</p> <p><strong>Put your food in the pot before the oil burns!</strong> Your health will thank you, and so will your cataplana!</p> <p><strong>Another tip:</strong> You don't need a thermometer for frying. Use a wooden spoon and dip the end into the hot oil. If fine air bubbles come out of the spoon handle, the oil is hot enough for frying. If it starts to smoke, it's much too hot.</p> <p><strong>What if it does happen!</strong> If you accidentally heat your copper pot above 232 degrees Celsius, the tin may melt. It is 100% safe for your health, even if it ends up in the food. Your body will simply excrete it. If necessary, the pot can be re-tinned.</p> <p>If you expose your copper pot to temperatures above 250 degrees Celsius, it may warp. Actually not a problem, but when cooking on an electric stovetop, there may be heat loss due to the warped bottom.</p> <p><strong>One more important thing:</strong> Copper conducts all temperatures very quickly. Including to the handle! Please use a pot holder or cloth when touching the pot.</p> <p>This cataplana is a very high-quality cooking device. With a little love, this wonderful cataplana will quickly bring you a lot of joy and accompany you for a lifetime.</p> <p>Copper is a living metal and will change color with use. You can polish away these traces of life, but we recommend not doing so and letting the pot age with dignity.</p> <p>Tin can become dull with use. The original silver shine will change to a matte gray. If you wish, you can retin at any time. This will cost around 40 euros for a pot of this size, but it is not necessary as long as the coating is not heavily worn and scratched.</p>
