This unique cooking device comes from Portugal and is traditionally used (similar to our Roman pot) for baking in the oven, on a gas stove, or over an open fire. It offers a wonderfully versatile shape with incredible possibilities in modern kitchens, as well as for camping and outdoor cooking over a campfire or grill.
The CATAPLANA can be effortlessly separated into two halves with a single motion and used individually for searing, cooking, or serving. The copper, coated with pure tin, provides excellent non-stick properties in combination with oil, making it perfect for both high-temperature searing and slow cooking. With the lid, the CATAPLANA becomes a small flavor miracle, preserving vitamins and taste while steaming and slow-cooking. Cooking in its own steam is fantastic, allowing you to save on aluminum foil for yourself and the environment.
In Portugal, seafood is mainly prepared in the closed CATAPLANA and served hot at the table with incredibly intense and delicious aroma and fragrance. History: The CATAPLANA originally comes from hunting and horseback riding. Thanks to the two half-shells, a rider (knight) could conveniently carry their cooking device attached to their belt or saddle. A copper CATAPLANA is relatively lightweight compared to other cooking devices and forgiving of any knocks and bumps. Even better: The game, fish, or forage collected while on the go can be comfortably transported in the CATAPLANA. The two halves can be closed like a bag. <h2>Healthy Cooking with the Cataplana</h2> <p>Our tip for a healthy lifestyle, copper cookware that lasts a lifetime, and more enjoyment in the kitchen: use only high-quality oils and add a small amount to your Cataplana right from the start. A copper pan should never be heated empty.</p> <p><strong>Important to know:</strong> The tin lining may begin to melt at temperatures above 232u00b0C (450u00b0F). At temperatures above 250u00b0C (482u00b0F), the copper itself may start to warp.</p> <p>A standard stovetop can reach temperatures of 400u00b0C (752u00b0F), a ceramic cooktop up to 600u00b0C (1,112u00b0F), and a gas flame or open fire can exceed 1,000u00b0C (1,832u00b0F)!</p> <p><strong>Don't worry!</strong> During normal cooking, frying, and baking, you will never reach these temperatures.</p> <p><strong>Pay attention to the smoke point.</strong> It's simple: if the oil starts smoking, it is too hot. Long before your Cataplana suffers any damage, your health may already be affected.</p> <p>Above approximately 175u00b0C (347u00b0F), frying and deep-frying can become unhealthy due to the formation of undesirable compounds. Even oils designed for high-temperature cooking will generally begin to burn by 200u00b0C (392u00b0F). One exception is highly refined sunflower oil, which can withstand temperatures above 230u00b0C (446u00b0F).</p> <p><strong>Add your food before the oil starts to burn!</strong> Your health will thank you, and so will your Cataplana.</p> <p><strong>Another useful tip:</strong> You do not need a thermometer for frying. Simply place the end of a wooden spoon into the hot oil. If fine bubbles form around the wood, the oil is hot enough for frying and deep-frying. If the oil starts to smoke, it is far too hot.</p> <p><strong>What if it happens anyway?</strong> If you accidentally heat your copper cookware above 232u00b0C (450u00b0F), the tin lining may melt. Tin is completely food-safe and harmless to human health, even if traces were to enter your food. The body naturally eliminates it. If necessary, the vessel can be professionally retinned.</p> <p>If your copper cookware is exposed to temperatures above 250u00b0C (482u00b0F), it may warp. This is usually not a major issue, but on electric cooktops a warped base can reduce heat transfer efficiency.</p> <p><strong>One more important note:</strong> Copper transfers heat extremely quicklyu2014including to the handles. Always use oven mitts, pot holders, or a cloth when handling hot cookware.</p> <p>This Cataplana is a premium-quality cooking vessel. With a little care, it will bring you years of enjoyment and may well accompany you for a lifetime.</p> <p>Copper is a living metal and will naturally change color over time. While these signs of age can be polished away, we recommend allowing the cookware to develop its own beautiful patina.</p> <p>The tin lining may become dull with use, changing from its original silver shine to a matte gray finish. If desired, the Cataplana can be retinned at any time. For cookware of this size, the cost is typically around u20ac40, although this is unnecessary as long as the lining is not heavily worn or scratched.</p> <p> </p>
